Grandmother's Cornbread Recipe

2-1/4 cups Butter
2-3/4 cups & 3 tablespoons white sugar
9 eggs
4-1/2 cups buttermilk 
2-1/4 teaspoons baking soda
4-1/2 cups cornmeal 
4-1/2 cups all-purpose flour
2-1/4 teaspoon salt

1. Preheat oven to 375 degrees F (175 degrees C).  Grease 4  8 inch square pans
2. Melt butter in large skillet. Remove from heat and stir in sugar.  Quickly add eggs & beat until well blended.  Combine buttermilk with baking soda & stir into mixture.  Transfer to large bowl.  Stir in cornmeal, flour, and salt until well blended and few lumps remain.  Pour batter into prepared pans.
3.  Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
