BLUEBERRY FARRO SALAD

  • 1 cup FARRO
  • 2 cups blueberries
  • 1 cup diced celery
  • 5 green onions
  • 1/2 cup diced red onion
  • 1cup diced red bell pepper
  • 1/2 cup sunflower seeds
  • 1/4 cup cider vinegar
  • 1/4 cup canola oil (or less)
  • 2 teaspoons cumin
  • 1tablespoon coriander
  • 1tablespoon maple syrup
  • 1/2 tsp salt
  • grind of black pepper
Rinse FARRO and put in pot with 4 cups water. Bring to a boil, reduce heat and simmer til soft, about 40 minutes.
Combine blueberries, celery, onions, pepper and sunflower seeds in large bowl. Add farro.
Whisk vinegar, oil, cumin, coriander, maple syrup in small bowl. Drizzle over farro and toss gently. Season to taste.
